As our newest location, 100 North Kitchen + Lounge and, our craft whiskey themed “Speak Easy” Tribune, begin to take hold, I am excited to share all of what we offer to you, our guests! Our farm fresh ingredients and, our finely crafted beverages are sure to please the most discerning palate. I have an overall enthusiasm for the restaurant industry and am looking forward to growing our brands, into two of the best, in the OC! Thank you for joining us! Head Chef (Chef “Memo”)

Like many head Chef’s in our industry, Chef “Memo”, started as a dishwasher for the Florentine family 21 years ago. After studying and participating with some of our most creative and skilled culinary craftsman, Memo earned the opportunity to make our kitchen his very own. Not only has he mastered the art of satisfying 10’s of thousands of our guests, he has also created four, fully functional and different menus, for the family’s four unique concepts; all out of the same kitchen! Truly remarkable, truly creative and truly efficient. Please join us in celebrating yet another one of Chef Memo’s remarkable accomplishments; a farm to table experience at 100 North.


Delayne Bond

The Florentine family along with their long history of food service in the downtown Fullerton area has a special place in my heart. Joe and I worked together for over 15 years before I ventured out on my own to start my own restaurant. Now, I am looking forward to being back and a part of the new team at 100 North. My husband and kids are all very pleased and supportive for my return. I couldn’t be more thrilled about this new adventure with Joe.


Brian Bentz

My bartending career began about 14 years ago. I settled in L.A. from Minnesota, where a warm day was in the 50’s! 100 North promises to be one of north Orange County’s premier eateries and lounges’ so I’m truly looking forward to being a key part of the team. Stop by and I’ll concoct one of my favorites for you; a Mezcal Negroni!


Paul Lavigne

About 5 years ago, I decided I wanted to become a bartender but, I also wanted understand more of the crafted beverage industry. At 5 years in, I guess you could say I’m the rookie of this extremely talented bunch. I’d love to have you join us and enjoy one of my old time favorites; a Rye Old Fashioned.


Wayne Buterbaugh

As a back east, Rhode Island kid, I decided to hit the road and head to California in 1998. I’ve enjoyed refining my crafted bartending skills over the past 20 years and am excited to bring my expertise to Fullerton’s 100 North! I look forward to slinging whiskey for you anytime!
